The major varieties of pulses grown in turkey are lentils, chickpeas, white beans, red beans which are used for human nutrition and vetches. The best known characteristic of pulses is that they are an important vegetal protein source. The average protein content of pulses is about 20 to 32%. They are also very rich in vitamins like a, b and minerals like iron, calcium and magnesium. They have high carbohydrate content. Because of their nutritive characteristics, pulses are categorized as healthy foods.

Selection Tips:
Good quality dry onions should be firm and hard with short, tight necks and dry papery skins. Slightly loose outer skin is common and should not affect quality.

Storage and Handling:
Onions need to be kept in a cool, dry well-ventilated area. Do not store whole onions in plastic. Cut onions can be stored in sealable containers and refrigerated for 2 to 3 days.
